Most non-alcoholic beers you’ll see today start life as standard beer. They’re typically brewed using the same ingredients and processes as alcoholic beer, with an extra step added later to remove (or limit) the alcohol. Modern methods of alcohol removal has allowed a wide variety of alcohol-free beers that still taste great.

Methods of Brewing Non-Alcoholic Beer

Removing Alcohol After Brewing

Many breweries that make both alcoholic and non-alcoholic beer use this approach. It lets them brew everything the same way, then selectively remove alcohol for their non-alcoholic range.

Heating / Boiling

Alcohol boils at around 70°C / 158°F, while water boils at 100°C / 212°F. By carefully heating and maintaining the beer to a temperature between these two boiling points, the alcohol will evaporate while most of the water-based liquid remains.

This method works — but it comes with a downside. Heat doesn’t just drive off alcohol; it can also strip out delicate aromas and flavours. If the beer is overheated, the resulting taste can be flat or "cooked".

Vacuum Distillation

Vacuum distillation improves on simple heating. By placing the beer in a sealed container and significantly lowering the air pressure, the boiling point of alcohol drops even lower than 70°C / 158°F. That allow a much lower temperature to be applied to evaporate the alcohol, helping preserve flavour and aroma.

This method is more expensive and technically complex, but it’s widely regarded as one of the better ways to produce high-quality non-alcoholic beer.

Non-Alcoholic Yeast

Another approach is to limit alcohol production from the start. Specialised yeasts are used that either don’t ferment certain sugars, or stop fermenting very early. This allows a beer to be brewed with very low alcohol content right from the outset.

The challenge here is balance — fermentation creates alcohol, but it also creates flavour. Stop fermentation too early and the beer can end up overly sweet or underdeveloped.

Why Non-Alcoholic Beer Isn’t Always Exactly 0.0%

Even when alcohol is removed, the process doesn’t always achieve absolute zero ABC. A tiny amount of alcohol can remain if:

  • Evaporation isn’t 100% complete
  • Small amounts of fermentable sugar remain
  • Trace fermentation continues in the bottle or can

Because of this, many beers are labelled as <0.5% ABV (less than 0.5%). This gives breweries some legal and technical breathing room.

For context, this level of alcohol is still comparable to, or lower than, everyday foods and drinks. Overripe bananas, orange juice, and some lemonades can naturally reach similar alcohol levels.

What “Alcohol Free” Means Around the World

The definition of alcohol free isn’t universal. Different countries draw the line in different places:

  • 'Netherlands – must be below 0.1% ABV
  • Austria, Belgium, Finland, Germany – up to 0.5% ABV
  • Spain – up to 1.0% ABV
  • Italy and France – up to 1.2% ABV

That means a beer labelled alcohol free in one country may legally be considered low alcohol somewhere else.
