Watts River Brett Pale Ale is fermented with both a primary yeast as well as the ‘wild’ Brettanomyces over an extended period of time, both in the brewery as well as in the final bottle. It will continue to ferment even after bottling, which causes the alcohol content to vary between 4.5 and 6.5%, and the IBU to vary between 20 and 30.
